Place olive oil in a pan and heat gently over low heat.
Season both sides of chicken breasts with salt, pepper, and Italian seasoning. If you want to make more than a few chicken breasts, and these measurements don't work, just know that you are wanting to generously season each side of all breasts. Place in warm pan, without over-crowding the pan.
Continue to cook over medium-low heat, turning once, about 4 minutes per side. I covered the pan to avoid splatter, but it also allows you to cook the meat at lower temperature. This avoids burning the spices and/or the chicken.
